UZUKI Japanese Cooking with Emi Hirayama

Classes

“A taste of Japan, an insight into Japanese cuisine, some Japanese cooking techniques, and a delicious meal.“

– Harris and Ruth Silverstone

Kayaku Gohan Classes with Emi

Small Groups

My classes are a great chance to learn not only food but also Japanese. Although I usually teach in English, you are welcome to try your Japanese skills. I’ll also let you know special expressions we use during the meal.

All classes are comprised of 2–4 people, just large enough for a small group of friends but small enough to get personal attention. The minimum number for a reservation is two students.

After deciding what foods and ingredients you like by e-mail, I then prepare a suitable menu. It’s important to let me know if you have any food allergies or restrictions.

Everything is ready when you arrive. For a typical meal, we cook 3–4 dishes: a soup (either miso or broth-based), rice, and a boiled or grilled dish.

Please understand Japanese houses are smaller than Western ones, so it gets busy in my kitchen!

The fee per person for one 3-hour class is from 4,000 yen (depending on the ingredients used in the meal.) Class times are also flexible. Please contact me!

Sweet Making Class

We also have a Japanese sweet making class. The fee for this class is from ¥2,000 per person

Healthy and Slow Food

My food philosophy is to use pure and non-additive ingredients/seasonings like pure sweet rice wine, rice vinegar and often try to use organic vegetables. And I try to introduce how to cook in a slow food way, appreciating the background behind foods and how they are served.

But I'd also like to be flexible in cooking, since my students are not Japanese. When they’re back in their own countries, it may be difficult to get genuine ingredients and utensils. I will be also happy to prepare vegetarian menus.

You can learn to cook many kinds of Japanese food, everything from Kyo–ryori (traditional Kyoto cuisine) to home-style Japanese dishes, as welll as wagashi (Japanese sweets).

Traditional Japanese cuisine consists of the following kinds of dishes:

aemono

dressed or marinated salad

shirumono

soup

yakimono

grilled dish

nimono

boiled/simmered dish

agemono

deep-fried dish

mushimono

steamed dish

others: cooked rice, sushi, noodles and sweets

We can also make seasonal dishes or special foods for holidays (ex New Year's)
